I make it quite frequently. I have also added a can of diced tomatoes salsa style (Meijer brand) to add some more vegetables to the mix. This may seem like it might make it too moist, but it’s fine once all the chicken is shredded. This dish freezes well and makes for an easy lunch in the microwave.
