In a stovetop recipe you would be sautéing the onions and garlic in butter or olive oil, which adds richness to the dish. You really need a little bit of fat (you can sub olive oil if you like) in the dish to give it a rich and authentic mouthfeel.

I did tweak it a little bit, I sautéed the onion and garlic before adding it to the crockpot, and I also added a 1/2 cup of red wine to it, and it was delicious!
